Ingredients

  • 1 package (16 oz.) bow tie or small tube pasta
  • 1 cup shredded cheddar cheese
  • 2 cups broccoli florets
  • 1 cup sliced carrots
  • 1 cup diced cucumber
  • 1 cup halved cherry tomatoes
  • 1/2 cup chopped green onions
  • DRESSING:
  • 1/2 cup cider vinegar
  • 1/2 cup sugar
  • 1 garlic clove, minced
  • 1 green onion, chopped
  • 1/2 tsp. ground mustard
  • 1/2 tsp. salt
  • 1 cup vegetable oil
  • 4 tsps. poppy seeds

Direction

  • Follow the package directions to cook the pasta, then drain and rinse under cold water. Transfer into a big bowl, then put in onions, tomatoes, cucumber, carrots, broccoli and cheese. Mix together the salt, mustard, onion, garlic, sugar and vinegar in a blender, then pour the oil slowly and blend until smooth. Put poppy seeds, then pour over pasta mixture and toss. Cover and chill for a minimum of 1 hour.
