Ingredients

  • 12 oz. fresh mozzarella cheese, cubed
  • 6 tbsps. olive oil
  • 4 tsps. minced garlic
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 package (16 oz.) uncooked linguine
  • 1 cup chopped fresh basil leaves
  • 3 medium tomatoes, chopped

Direction

  • Mix together pepper, salt, garlic, oil and cheese in a big bowl, then allow to stand at room temperature for an hour.
  • At the same time, following package directions to cook linguine, then drain and rinse under cold water. Put into cheese mixture, then stir in tomatoes and basil. Serve cold or at room temperature.
