Ingredients

  • 4 bratwurst sausages around 1 lb or 454g
  • 1 medium onion sliced into half-moons (around 150g)
  • 1 green bell pepper sliced (around 120g)
  • 3 garlic cloves minced (around 1 teaspoon or 5g)
  • 1 tablespoon 14g unsalted butter
  • teaspoon 0.6g salt
  • teaspoon 0.3g ground black pepper
  • 6 fl oz 177ml beer

Instructions

  • Slice the onion into half-moons and the bell pepper into strips. Mince the garlic cloves.
  • Place the sliced onions in the bottom of the slow cooker crock. Top with the bratwurst sausages.
  • Scatter the sliced bell peppers and minced garlic over the brats.
  • Season with salt and black pepper. Dot with the butter.
  • Pour the beer over the contents of the slow cooker.
  • Cover and cook on low for 6 hours.
  • Once done, remove the brats from the slow cooker using tongs. Drain any excess liquid from the crock.
  • Serve the beer-braised brats on buns, topped with the tender onions, peppers and cooking liquid from the crock.

Notes

  • For extra flavor, brown the brats lightly in a skillet before adding to the slow cooker.
  • Substitute chicken or vegetable broth for the beer if desired.
  • Add a teaspoon of caraway seeds or fennel seeds for an authentic German flavor profile.
  • Swap out the green pepper for a red or yellow bell pepper for variety.
  • Serve with mustards, sauerkraut, or other desired toppings.
