Ingredients

  • 6 boneless skinless chicken breasts (1.5 pounds or 680 grams) pounded thin
  • 1 cup 230 grams butter, melted
  • 3 tablespoons 21 grams minced garlic
  • 1 ¼ cups 115 grams dry bread crumbs
  • 1 cup 100 grams grated Parmesan Cheese
  • 2 ¼ cups 270 grams shredded cheddar cheese
  • ½ teaspoon 0.5 grams dried parsley
  • ½ teaspoon 0.5 grams dried oregano
  • ½ teaspoon 0.5 grams ground black pepper
  • ¼ teaspoon 0.25 grams salt

Instructions

  • Heat oven to 350°F (175°C).
  • Melt the butter in a small saucepan over low heat and cook the garlic for around 5 minutes until tender.
  • In a shallow bowl, combine the breadcrumbs, Parmesan, cheddar cheese, parsley, oregano, pepper and salt.
  • Dip the chicken breasts into the garlic butter mixture, coating both sides.
  • Press the chicken into the bread crumbles mixture to evenly coat both sides.
  • Place the chicken in a baking dish, drizzle with any leftover garlic butter, and top with any remaining breadcrumb mixture.
  • Bake for 30-35 minutes until chicken is cooked through and juices run clear when pierced with a fork.

Notes

  • For a spicier flavor, add ¼ to ½ teaspoon of cayenne pepper or crushed red pepper flakes to the breadcrumb mixture.
  • You can use Italian-seasoned breadcrumbs for extra flavor.
  • If the breadcrumb mixture seems dry, add a little extra melted butter to moisten it before coating the chicken.
  • Serve with rice, pasta, roasted vegetables, or a fresh salad.
