Cheddar Bay Sausage Balls

These Sausage Balls are an absolute hit with any crowd, perfect for breakfast, brunch, or as a delightful holiday appetizer. Inspired by the classic Bisquick recipe, I've opted for Red Lobster Cheddar Bay Biscuit mix to elevate the flavor. Combined with savory sausage, cream cheese, and sharp cheddar, they're irresistibly delicious—you'll find yourself reaching for seconds!

Ingredients
  

  • 3.5 oz 100g ground sausage, at room temperature
  • ½ cup 50g freshly grated sharp cheddar cheese
  • 3 oz 85g cream cheese, softened
  • 1 cup 120g Red Lobster Cheddar Bay Biscuit Mix (or Bisquick)
  • 1 packet of Red Lobster Cheddar Bay Biscuit Seasoning
  • 2 tablespoon fresh chives diced
  • 1 teaspoon dried ground rosemary

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the ground sausage, grated cheddar cheese, softened cream cheese, Red Lobster Cheddar Bay Biscuit Mix, seasoning packet, diced chives, and ground rosemary. Use a stand mixer or your hands to thoroughly incorporate all the ingredients. If the mixture seems too dry, add 2-3 tablespoon of milk to moisten it.
  • Scoop out portions of the mixture and roll them into 1-inch balls between your palms. Place the formed balls onto a parchment-lined or greased baking sheet, spacing them slightly apart.
  • Bake for 25 minutes, or until the sausage balls are cooked through and golden brown on the outside.
  • Remove from the oven and let cool slightly before serving. Enjoy these savory bites on their own or with your favorite dipping sauce!

Notes

  • For a spicier kick, substitute pepper jack cheese for the cheddar or add a pinch of cayenne pepper to the mixture.
  • If you don't have the Red Lobster seasoning packet, you can substitute it with 1 teaspoon garlic powder, 1 teaspoon onion powder, and ½ teaspoon paprika.
  • These sausage balls can be made ahead and frozen for later. Simply bake from frozen, adding a few extra minutes to the cooking time.
  • Experiment with different herbs and spices to create your unique flavor combinations!
