Ingredients
  

  • 8 oz 225g day-old French bread loaf, cubed (around 6 cups)
  • cup 75g unsalted butter
  • ¾ cup 165g packed light brown sugar
  • 4 large eggs
  • 1 ½ cups 355ml whole milk
  • 1 ½ teaspoon 7ml pure vanilla extract
  • 1 ¼ teaspoon ground cinnamon divided
  • 1 tablespoon 12g light brown sugar for topping

Instructions
 

  • Preheat your oven to 425°F (218°C). Grease a 9x13-inch baking dish with butter or non-stick spray.
  • In a saucepan, melt the butter over medium heat. Once melted, whisk in the ¾ cup brown sugar until fully dissolved and the mixture is smooth. Pour this into the prepared baking dish and spread evenly.
  • Arrange the cubed bread in an even layer over the brown sugar-butter mixture in the dish.
  • In a bowl, whisk together the eggs, milk, vanilla, and ¾ teaspoon of the cinnamon until fully combined. Pour this egg mixture over the bread cubes, ensuring all pieces are soaked.
  • Sprinkle the remaining ½ teaspoon cinnamon and 1 tablespoon brown sugar evenly over the top.
  • Bake for 25-30 minutes, until the top is golden brown and puffed. Remove from oven and optionally dust with confectioners' sugar before serving.

Notes

  • Use day-old or lightly stale bread for the best absorption of the custard mixture.
  • For gluten-free, use your favorite gluten-free bread.
  • Replace butter with coconut oil or vegan butter for dairy-free.
  • Substitute milk with almond, oat, or coconut milk for dairy-free.
  • Let casserole rest for 5 minutes before serving for easier slicing.
  • Drizzle with maple syrup or dust with cinnamon sugar for extra indulgence.
