This recipe offers a delightful and enjoyable way to incorporate fiber into your diet. Additionally, it's low in carbohydrates and requires simple ingredients to prepare.
1.5lbsbroccoli floretscut into 2-3 inch pieces (680g)
4.5tablespoonsextra virgin olive oil67ml
1teaspoongarlic powder5g
1teaspoononion powder5g
½teaspoonfine salt3g
15-45mlfresh lemon juice1-3 teaspoons, to taste
Instructions
Preheat oven to 220°C/425°F. Line a large baking sheet with parchment paper.
Cut broccoli florets into 5cm pieces, trimming stems to keep florets intact.
Place broccoli on a prepared baking sheet. Drizzle with olive oil and sprinkle with salt, garlic powder, onion powder, and black pepper. Toss to coat evenly.
Roast for 18-21 minutes until stems are tender.
Remove the baking sheet and smash broccoli pieces gently but firmly with the bottom of a sturdy glass.
Arrange smashed broccoli in an even layer on a baking sheet. Sprinkle evenly with Parmesan cheese and red pepper flakes (if using).
Bake for 5-7 minutes until cheese is melted and starting to brown.
Remove from oven, drizzle with lemon juice, and serve immediately.
Notes
For a vegan option, use vegan Parmesan cheese.
If broccoli is very moist, pat dry with paper towels before roasting to increase crispiness.
Serve smashed broccoli florets as a side dish, snack, or appetizer. Pairs well with chicken, fish, or steak.
