Ingredients
  

  • 1.5 lbs broccoli florets cut into 2-3 inch pieces (680g)
  • 4.5 tablespoons extra virgin olive oil 67ml
  • 1 teaspoon garlic powder 5g
  • 1 teaspoon onion powder 5g
  • ½ teaspoon fine salt 3g
  • 15-45 ml fresh lemon juice 1-3 teaspoons, to taste

Instructions
 

  • Preheat oven to 220°C/425°F. Line a large baking sheet with parchment paper.
  • Cut broccoli florets into 5cm pieces, trimming stems to keep florets intact.
  • Place broccoli on a prepared baking sheet. Drizzle with olive oil and sprinkle with salt, garlic powder, onion powder, and black pepper. Toss to coat evenly.
  • Roast for 18-21 minutes until stems are tender.
  • Remove the baking sheet and smash broccoli pieces gently but firmly with the bottom of a sturdy glass.
  • Arrange smashed broccoli in an even layer on a baking sheet. Sprinkle evenly with Parmesan cheese and red pepper flakes (if using).
  • Bake for 5-7 minutes until cheese is melted and starting to brown.
  • Remove from oven, drizzle with lemon juice, and serve immediately.

Notes

  • For a vegan option, use vegan Parmesan cheese.
  • If broccoli is very moist, pat dry with paper towels before roasting to increase crispiness.
  • Serve smashed broccoli florets as a side dish, snack, or appetizer. Pairs well with chicken, fish, or steak.
